The other day, I wanted to make something easy, from scratch and that would make both my boys happy.
Shrimp Rigatoni
1 bag Shrimp ($5)
1 box Rigatoni
1 jar Classico Alfredo with Roasted Red Peppers
1 bag Microwavable Broccoli
1 can mild Rotel
Lightly spray sauce pan with Pam and throw in Shrimp when hot.
Meanwhile, boil water for pasta. Cook Pasta and then drain.
When Shrimp look done (3-4 minutes), toss in can of Rotel and Alfredo Sauce. Then add drained Pasta to pan. Stir.
Add Broccoli to pan. Keep warm on low heat. Serve with garlic bread. Yummy!

What on earth is Rotel?
And any sauce that has Roasted Red Peppers in is double thumbs up in my opinion!
It is tomatoes and chilis and some other great stuff thrown in. It is a must have for most any dish in this part of Texas!
