Taco casserole

Spray a 13x9 glass baking dish with PAM and then line with 2 cans of crescent rolls (one for the bottom and one for the sides). Bake at 375 for 10 min.


Prepare 2 pounds ground beef with taco seasoning.

Spread cooked meat into baked crescent rolls, then spread with sour cream (24 oz container), sprinkle crushed doritos on top, then top with shredded cheddar cheese.

Bake again for about 10-15 min until the bottom of the crescent rolls are golden (look at the underneath of your baking dish) and cheese is melty.

Side Effects?

Uhuh, what are those? Well, I guess they were what I had last on Day 2 of 182. I hope that they stay away. I can tell you that it wasnt a pleasant feeling. The nurse says that I might have some SE's (as they will be known from now on) during week 3. So, I decided to start tracking it by the weeks above.

I also learned that Lupron makes you gain weight. YUCK! Just what I needed more weight! The attack plan is to ensure that I am walking several days a week and hopefully soon I can get back on the C25K program. It was so nice to be able to fit into my 16 skirt today. I also want to say that for the first time in several months I am not having any pain when DH and I are intimate. It is so nice!

One of the other se is supposed to be irritability. Well, that just sucks. Not only am I reeling from the information that i found out, now I might get hormones that make me more irritable? Well, alrighty! I sure hope that this se doesnt rear its ugly head but if she does, I am ready.

My MIL was visiting this past week and she stated that twins run in her family. hmmm. Do men have the ability to determine that? I dont know. Maybe that is why they seem to think that they have super sperm?! I dunno. Twins would be great for DH as he would then say - 1 and done. I am not so sure that I could maintain working in the short term while taking care of twins.

At this point, I want a healthy baby.

Pepper Steak

On Saturday night, I made Pepper Steak for dinner. I used a recipe from my mother. She used to make it all the time when I was growing up. I used to make it a long time ago but finally made it after about 8 years.



Pepper Steak



1 pound of Flank Steak

2 Green Peppers sliced long ways

1 Onion

2 jars of gravy

1/2 can Rotel (or any stewed tomatoes)



Cook the meat and then add the veggies. Once the meat is done, but it in a casserole dish with the gravy and cook on 350 for 1 hr.



I then made some rice to under it. Overall, it was a delishish delight and we even had leftovers.



Tomorrow, I am going to make something simple with Chicken.
